white gull inn salad dressing

from the white gull inn, via the capital times, commentary ~nh

the best salad dressing i know. ganked from the white gull inn, when it was printed one day in the capital times, and since liberally commented by yours truly.

  • 2 C olive oil
  • 1 1/4 C balsamic vinegar
  • 3/4 C dijon mustard
  • 1 t white pepper
  • 1 T chopped parsley

Combine all ingredients in an electric mixer [is that necessary?? dude, just put it in a jar and shake it up!] until thoroughly blended. Makes 4 1/2 C.

toppings: 1 C parmesan cheese, 1 C dried cherries or cranberries, 1 C roasted pecans.

put greens in a large mixing bowl. toss with one cup dressing [are they feeding armies?? one whole cup?!]; split among four salad plates. top each salad with 1/4 C each of the toppings [or just throw some topping on. for being that anal about the amounts you'd think they'd specify how much of what greens ...]
