vegan chocolate chip cookies

These are YUMMY -- crispy and very traditionally chocolate-chippy. The flax gives them just a tiny bit of graininess to it, yum yum. Did I mention yum?

NB: The recipe wants you to prepend every ingredient with "organic." If you do, the cookies might be just a little bit more cruelty-free, but they'll cost eight times as much to make. Your choice ... (though I hear that it's important to buy organic chocolate, as most chocolate in the world is harvested using slave labor ...)0

  • 2 C white or all-purpose flour
  • 1/2 t baking soda
  • 1/2 t baking powder
  • 1 t salt
  • 3/4 C softened vegan non-hydrogenated margarine
  • 1.25 C turbinado (okay, I used regular white) sugar
  • 1 flax seed egg (or other egg replacer, I guess)
  • 1 t vanilla extract
  • 9 oz. chocolate chips (this was a lot! maybe 1 C)
  • 3/4 C chopped nuts (I used walnuts)

Preheat oven to 375 degrees F.

Combine flour, baking soda, baking powder, and salt in smallish bowl. Set aside.

Cream together margarine and sugar until light and fluffy. Beat in the egg and vanilla. Blend in the flour mixture slowly. Stir in the chocolate chips and (wal)nuts.

Drop heaped spoonfuls onto a cookie sheet. Bake 9-12 minutes (though I found they needed more like 20!), until browned.

Makes about 4 dozen 2-inch cookies (liars! maybe 2.5 doz, max!)
