Even though béarsaise should be screaming to be put on eggs and spinach, I include the construction of this marvel of brunch here for completeness's sake.
Toast the English muffins. Wilt the spinach. Grate the cheese, depending on just how lactophilic you're feeling. What order you assemble everything in is up to you, but I like muffin-spinach-egg-cheese-béarnaise. Put chopped-up bits of fresh tarragon (which you have on hand from the making of the béarnaise) on top. Prepare for death by dairy and moaning.
